I love the simplicity of this easy lunch. Time is always of the essence and looking after you gut health can easily get compromised if you let it.

I grow my own spinach and this year has seen a bountiful crop of giant leaves. It is so easy to grow and you don’t need a huge garden to grow it in. You could even grow some in a pot on a balcony. Iron and calcium rich as well as full of folate, fibre and works as an anti-inflammatory in the gut Spinach is my super hero food. No wonder Popeye used to eat it!
