Grilled Corn and Garlic Rice

  1. Add the corn cob to a pan of boiling water and cook for 5 minutes.
  2. Add 1 cup of rice and 2 cups of water and a pinch of salt to a saucepan and bring to the boil. Once boiling, cover and simmer for 8 - 10 minutes.
  3. Once the corn has cooked through, remove and rinse with cold water then slice off the corn into a lightly oiled heat proof pan.
  4. Crush the garlic clove and stir in with the corn. Pop in the oven for 5 minutes.
  5. Once the rice is cooked through, stir with a fork and add to a large bowl.
  6. Remove the corn from the oven and stir into the rice. Stir in the chopped herbs and black pepper and serve.
