This super food salad has a lovely crunch, great flavour and will keep you feeling full and satisfied, as well as gut healthy.

Carrot, Celery and Chickpea Salad
I used pre-prepared roasted spicy chick peas that I had in the fridge ready and waiting. Check out the roasted Chickpea recipe for how to do this. If you haven't got any of these you can swap them for toasted seeds, cashew or walnuts or even green beans to add some vital protein to this meal.

  1. Wash and chop the spinach into bite size pieces.
  2. Chop the Pepper, Celery, Tomatoes, Avocado (if using) and lay on the bed of Spinach
  3. Grate the carrot over the salad.
  4. Add the chickpeas and garnish with dollops of sauce around the edge, squeeze the lemon and add the black pepper.
