This recipe is well worth the extra time to make. Full of calcium and good fats, vitamin D, vitamin E (good for your skin,hair and nails). Its also very filling and will provide you with lots of energy throughout the day settling even the most unpredictable of stomachs (providing your not intolerant to eggs and avocados).

  1. Half the avocado and remove stone.
  2. Scoop a bit extra out of the middle old each avocado half, enough to fit each egg in.
  3. Mash the scooped avocado and add the lemon juice and leave to one side.
  4. Heat oven to medium heat and place avocado halves on a small tray (maybe a loaf tin) so they cant roll to one side.
  5. Break an egg into each half and carefully load into the oven and cook for 5+ minutes until egg is cooked through.
  6. Whilst avocado eggs are baking chop the parsley, prepare your plate with the mashed avocado and sliced tomato.
  7. Remove baked avocado and eggs and serve with chopped parsley. Crushed black pepper is a fantastic addition and will provide you with extra antioxidents which will further improve your hair skin and nails.
Recipe Notes

This recipe can be a bit fiddly not spilling the eggs out of the avocado cases, but it is worth it in the end. Keep a close eye on it so you dont overcook the eggs.
